• Home pasta-making and small-batch preparations

Key specifications

• Straight cutting edge for clean, non-fluted cuts
• Compact accessory size for easy handling and storage
• Designed for compatibility with Marcato domestic pasta-making systems
• Food-contact materials with smooth finish for cleaning

How to use

Attach the LA ROTELLA LISCIA Heritage accessory to the compatible Marcato unit following the manufacturer's guidance for secure mounting. Place the rolled or sheeted dough on a flat surface and guide the wheel along the dough with steady pressure to produce straight cuts or to portion sheets into even strips. For trimming, pass the wheel along the sheet edge to remove excess dough in a single motion. Remove the accessory from the unit before washing and handle the cutting edge with care.

Recommendations

Use the wheel on well-floured surfaces to prevent sticking and maintain smooth cuts. For consistent strip widths, mark the sheet or use the roller’s guide as reference. Clean the accessory after each use with warm water and mild detergent; dry thoroughly before storage. Avoid abrasive cleaners or soaking for prolonged periods to preserve the finish and function.
